Peach Palisade

Ingredients

  • 1/2 cup DaVinci Gourmet Peach Classic Syrup
  • whipped cream or cream anglais (optional)
  • 1 cup fresh raspberries
  • 3 egg whites
  • 1 cup sugar
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla
  • 12 soda crackers, crushed
  • 1/2 cup chopped nuts (optional)
  • 6 fresh peaches, peeled and sliced into long, thin wedges

Directions

Preheat oven to 325°F. Beat egg whites until firm, fold in the sugar. Add baking powder and vanilla. Fold in soda crackers and nuts. Line a baking sheet with parchment paper. Mound meringue into six separate circles, pushing an indentation into the center of each shell. Bake for 20-30 minutes until lightly browned. Marinade sliced peaches in Da Vinci Gourmet Peach syrup for 15 minutes. To assemble dessert, place one meringue shell on dessert plate, puddled in whipped cream or cream anglais. Add one tablespoon of peach syrup from the marinade to indented center of the meringue. Place the sliced peaches around the indentation, like the petals of a sunflower. Fill the center with raspberries.
